Ingredients:
8 T Country Crock Butter
2 T honey
1/2 t nutmeg
1/2 t vanilla
1 T ground cinnamon
1 cup almonds
4 cups whole grain oats
1 cup dried fruit
Heat oven to 350
Melt butter and mix in honey, nutmeg, vanilla, and cinnamon. Stir in oats and almonds, being careful to coat all.
Bake for 20 min, stirring half way through cooking time. At 20 minutes, take out mix and put in dried fruit (I used Sun-Maid Fruit Bits, but the cranberries have added sugar, so if you are on PRISM you may want to pic them out of the mix). I think I will try my own dried fruit next time, but these were easier. Put back in oven for 10 minutes. Let cool and enjoy.
Makes 20 1/4 cup servings @ 116 calories
Use to top yogurt, or apple slices dipped in peanut butter, or eat alone ( I tried it as cereal and it was not bad- much better than some of those sugar free bird food cereals).
